A great slow-cooker recipe, where you simply chuck everything into the pot, place the lid on top and switch it on. I like to serve this with gluten free pitta bread but you could also use gluten free buns.

Prep time: 5 minutes
Cook time: 8 hours on low
Ingredients
For the slow-cooker:
1kg pork joint
1 onions, sliced
1 tsp of smoked paprika
4 cloves of garlic, chopped
1 tbsp of honey
3 tbsp of apple cider vinegar
For the coleslaw:
1 apple, sliced
1 cup of red cabbage
1 cup of white cabbage
2 large carrots, grated
1 red onion, thinly sliced
4 tbsp of mayonnaise
Method
Place all of the slow cooker ingredients in to the pot, place the lid on and cook on low for 8 hours.
Before you are ready to serve make the coleslaw.
Use a mandolin to slice the vegetables and then mix with the mayonnaise.
Use a fork to separate the pork and serve with pitta bread and the coleslaw.
