A quick energy boosting lunch

Don't you just love a recipe that is really quick to prepare and doesn't require any thought or effort to make it? This recipe definitely ticks all of those boxes.



Serves 2

Prep time: 5 minutes


Ingredients:

1 tin of tuna, drained

1 dessert spoon of mayonnaise

20 Green olives, halved

6 sundried tomatoes, chopped

4 tablespoons of artichokes

4 generous handfuls of salad leaves


Method:


  1. Mix the tuna and mayonnaise together

  2. Mix the salad ingredients together and divide it equally between two bowls

  3. Divide the tuna between the bowls, serve and enjoy
